This recipe is submitted by our mom, Ann Wright. She says, “I baked this cake for Sheila’s fortieth birthday. She said it was delicious. I got it from Angels on Earth Magazine. It was a nice tall pound cake and a beautiful golden brown. I was tempted to cut a piece when it came sliding out of the Tube Pan

My mom tells us that her Grandmother Parsons always wore her apron and cooked on a wood stove (most of her married life) in her little house on Hamby Mountain in Purlear, North Carolina. She tells us that this is “So easy, so good!”

1 Box yellow cake mix
Bake according to directions on box in a pyrex 9 x 13 baking dish
.
Mix together in a sauce pan:
3/4 Cup Angel Flake coconut
1 1/2 Cup milk
1/2 Cup sugar
Bring to boil while cake is baking. when cake is done poke holes in the top and pour coconut milk and sugar mixture over cake while cake is hot. Cool. When cake is cold cover with 12 oz. Cool Whip. Sprinkle coconut on top.

She says that this is no ordinary meat loaf. “It’s so-o-o-o good it just melts in your mouth. All ages love it. You will not have left overs!”
If the 2 loaves are too much - just freeze the one loaf and enjoy later.
